Casa Pisoni: the new face of Trentodoc presented in Rome through identity, territory and Metodo Classico

In the increasingly competitive world of Italian sparkling wines, building a clear identity has become essential. It is from this need that Casa Pisoni was born, the new project created by the historic Pisoni family and presented in Rome at Hotel Chapter. More than a simple rebranding, the launch represents a true statement of intent: giving a precise and recognizable identity to the family’s world of Metodo Classico and Trentodoc sparkling wines.

Explaining the project was Elio Pisoni, who described Casa Pisoni as the natural evolution of a journey that began more than 170 years ago.

“The Pisoni winery has existed since 1852 and has evolved enormously over time,” Elio explained. “We felt the need to give stronger identity to a strategic part of our production — our Metodo Classico Trentodoc sparkling wines — which have grown tremendously over the years. Today, Casa Pisoni represents the world of our bubbles.”

This vision is reflected in a very precise production philosophy. No blends of grape varieties, but pure varietal expressions: Chardonnay, Pinot Noir, Rosé Blanc de Noirs and even Pinot Blanc, the latter initially conceived almost as an experiment and now one of the most distinctive labels in the range.

“These are radical and very clear choices,” Elio said. “We decided to use only one grape variety in each bottle because we want consumers to clearly recognize the varietal characteristics in the glass.”

Further reinforcing this identity-driven approach is the decision to produce only vintage wines. Every bottle tells the story of a single harvest year, with all the climatic nuances that come with it.

“Each vintage must express its own personality,” Elio explained. “Chardonnay should preserve its fruity notes, Pinot Noir its aromas of red berries like blueberries and wild strawberries, while Pinot Blanc offers more exotic sensations.”

Alongside varietal purity, Casa Pisoni also maintains a strong connection to traditional Metodo Classico craftsmanship. The remuage, for example, is still performed manually on wooden pupitres after long ageing on the lees inside a cave carved into the mountain, where the temperature naturally remains constant year-round.

Yet the true protagonist of the story remains the territory itself. The Pisoni family operates in the Valle dei Laghi area of Trentino, between Lake Garda and the Brenta Dolomites, one of Italy’s most suitable areas for producing high-quality sparkling wine bases.

“We live in a unique territory,” Elio said. “We benefit from an almost sub-Mediterranean microclimate thanks to the proximity of Lake Garda, while at night cold air currents descend through the Sarca gorge. This strong temperature variation allows us to obtain grapes with elegant acidity, ideal for Metodo Classico wines.”

A strong territorial identity that inevitably intersects with the changing dynamics of the wine market. Because producing Metodo Classico means making decisions today for wines that will only reach consumers years later.

“The market is the ultimate judge,” Elio observed. “In Metodo Classico this is even more challenging, because you produce today for wines that will be sold five or six years from now. We are seeing a trend toward lower dosage styles and greater attention to quality.”

For this reason, Casa Pisoni has expanded its range with Extra Brut wines and a style increasingly focused on elegance and precision.

According to Elio, today’s consumers may drink less than in the past, but they choose more carefully and with greater awareness. A phenomenon clearly reflected in the growing interest in wine tourism.

“Young people drink less, that’s true, but they are far more curious,” he explained. “We see many visitors between 25 and 30 years old arriving at the winery wanting to learn, understand and truly discover wine.”

And hospitality is precisely where the Pisoni family is investing heavily for the future. By the end of the year, construction will begin on a new hospitality-focused facility dedicated to wine tourism, confirming how direct connection with visitors and territory has become central to the future of Italian wine.
