The Rebels of Beer

When passion becomes a revolution. Choosing to abandon a well-defined path in order to follow a dream. That’s where the identity of Rebels was born—a Roman craft brewery that, for nearly ten years, has pursued an unconventional idea of beer, blending creativity, flavor, and independent spirit.

“We were just in our early twenties,” the founders recall, “when we decided to rebel against the routine and the studies we were pursuing. We had been brewing beer at home for a while, under the name Ombre Brewer, and at a certain point we said: it’s now or never.” This is how the Rebels project was born—not just as a brewery, but as a manifesto of a different vision of craft beer.

Being rebels doesn’t simply mean breaking the rules; it means consciously choosing to follow a personal and creative path, even when that path comes with challenges and sacrifices. This rebellious spirit is expressed through their approach, style, and voice. It’s reflected in their production—uncompromising and inspired by a true “culinary” method—and in their visual identity, bold, colorful, and impactful. Their labels often become collectible pieces in their own right.

The flavors? Never predictable. “We love to blend unconventional flavors, experimenting with unique ingredients like galangal, kaffir lime, fruit purées, or bergamot—an ingredient often unknown outside Italy.” The key word is balance: every ingredient is carefully selected and measured with scientific precision. This approach allows them to go beyond tradition without ever losing consistency.

Nearly a decade since its founding, Rebels has become a solid presence in the Italian craft beer scene. While the early years saw the market riding a wave of hype, today—according to the founders—there’s been a shift toward maturity. “Consumers are more informed now. They know what they’re drinking and can recognize quality. That gives us the opportunity to offer more complex beers, which are seen as real tasting experiences.”

Alongside the more experimental “specials,” their lineup also includes classic styles—Keller, Pils, IPA—designed to meet the needs of a growing and increasingly discerning audience. But what truly makes the difference is their belief that beer can be seen as a gastronomic product, on par with wine or a chef’s dish.

This philosophy fully comes to life in the Rebels Garden, the space the brewery established on Via Ardeatina, just steps from Rome’s Appian Way Park. More than a taproom, it’s a cultural hub where beer, music, street food, and community come together. “We wanted an inclusive space, where we could share our work and build a community around craft beer.”

The Garden is open daily, but it truly comes alive on weekends with events, DJ sets, and guest appearances from Rome’s best food artisans (and beyond), becoming a go-to spot for those seeking quality, fun, and authenticity.

Naturally, their gaze is set on the future. There’s no shortage of projects, though not all can be revealed just yet. What’s certain is that Rebels has no intention of losing its identity. “Yes to growth, but never at the expense of who we are. We’ll continue investing in technology to raise our quality, always staying true to our values.”

One thing is clear: these rebels are just getting started.
