Carlo Giusti and His Madness

I’d almost say that the impression Pitti Taste left on me last year was thanks to Carlo Giusti—but that might sound like an exaggeration… and yet there’s some truth to it. I often find myself talking about his follies: his mortadella made with the breast of the Tuscan black rooster, his extinct sheep breeds, and even pigeon prosciutto…

But if I’m being completely honest, what I appreciated most about Carlo is his openness to conversation. A free-flowing chat, full of direct exchanges of ideas and a genuine passion for his work.

Talking about his products alone isn’t really possible. They have to be seen, touched, and tasted. Only then can you truly understand how a “folly” becomes substance—how something like pigeon prosciutto can be both incredibly hard to imagine and surprisingly fascinating once you see it and taste it.

Dear Carlo, I’ve come back to Florence, but I want to visit you in Lajatico and see firsthand your 500 hectares of passion.

Here I’ve tried to capture part of your thinking in this video. Soon, in the March issue of theuniquemagazine.it,, we’ll also tell the rest of the story—what for me, for us, is a true expression of creativity, passion, and craftsmanship that only our country seems capable of producing.
