The “Sixth Taste” of Neapolitan Pizza: AVPN Highlights the Value of Traditional Fermentation

Recent scientific research is opening new perspectives on the role of dough and fermentation processes in shaping the flavor experience of authentic Neapolitan pizza. According to a study conducted by Oregon State University, the human sensory system may be capable of recognizing an additional primary taste beyond the five traditionally known ones: the starchy taste. This perception is linked to simple sugars and oligosaccharides released during the breakdown of starch through the action of the amylase enzyme — a natural process that also occurs in pizza dough.

For the Associazione Verace Pizza Napoletana (AVPN), this discovery carries particular significance. Fermentation has always been considered one of the key elements in achieving the quality and identity of authentic Neapolitan pizza.

Scientific research is confirming what Neapolitan tradition has always passed down through experience and daily practice,” says Antonio Pace. “The balance of the dough and its fermentation processes is essential to creating a pizza capable of fully expressing its aromatic profile. The 8-to-12-hour rising time already established in the first AVPN Regulations in 1984 still represents a precise benchmark today — rooted in artisanal culture and now increasingly supported by science.”

According to AVPN, proper fermentation affects far more than digestibility. It plays a decisive role in flavor, fragrance, crust coloration, and aromatic harmony, all closely connected to the Maillard reaction that develops during baking.

The debate around long fermentation times has therefore become increasingly relevant. While extended fermentation is now widely adopted, AVPN emphasizes the importance of balance: excessively prolonged fermentation can alter the biochemical structure of the dough, changing the pizza’s sensory identity and reducing the characteristic grain notes in favor of more acidic aromas.

Tradition, technique, and scientific research once again come together in the story of Neapolitan pizza, confirming how one of the most iconic symbols of Italian gastronomic culture continues to evolve while remaining deeply connected to its origins.
