It’s easy to just call it ham. But in Spain, ham is a form of culture that, at a certain point, borders on art.
It is carved by hand, served in small lonchas, and at room temperature. Every part of an iberico has its own identity — name included — and its own distinctive flavor. And then there’s the classification, based on origin and diet.
In short, nothing is left to chance, not even who is officially authorized to carve it.
