Iside De Cesare’s ‘wonderful adventure’.

What drives a Michelin‑starred chef to “settle” in a tiny village of just 40 inhabitants in Upper Lazio? It’s a question I’ve always asked myself — one for which I kept looking for an answer.

Iside De Cesare of La Parolina has a Michelin star, but I feel she deserves another one for her grace, her generosity, and her love for her land.

Of course, opening here was an act of courage — but one that has clearly been rewarded by what Iside and her restaurant represent today.
The territory reigns supreme. Her “caviar” is not caviar at all, but Onano lentils crafted in such a way that they look just like it.
And the herbs — the ones whose fragrance greets you from the very first step into the restaurant — take center stage in all her dishes

I truly believe that Iside’s greatest strength is her unbreakable bond with this place.
A location that forces you to slow down — with an outdoor terrace overlooking an endless panorama, the same view that becomes a living painting inside the dining room thanks to the large windows that frame sunsets almost impossible to replicate.

Her ideas are clear, her dishes just as much, and so is the undiminished enthusiasm for what Iside loves to call her “wonderful adventure.”
