Collio and the Amphorae of Evangelos Paraschos

It rarely happens that I feel the urge to return to a place I’ve already visited. Paraschos, in San Floriano del Collio, is one of those rare exceptions that makes me want to go back.

The idea was to go to Friuli and visit a few wineries. We chose San Floriano and the Paraschos agriturismo, getting in touch with Alexis. Everything went according to plan: a very pleasant chat with Alexis and a visit to the cellar (see the article) to put our noses and palates to his outstanding wines. Then a superb dinner in Gorizia.

But it’s the following morning, at breakfast, that we discover the charm of Evangelos Paraschos, Alexis’s father.

Sitting slightly apart from us, just two tables away, enjoying the little breeze that constantly blows through these parts, it doesn’t take long to start a conversation and become fascinated by his stories—how he talks about Stanko and Joško, about his Greek amphorae, the monks’ beeswax, and the journey, which also included a few small failures “with a hint of vinegar,” at the beginning of their production.

I usually never publish videos longer than five minutes.
Here I’m sharing two that are ten minutes long, but I hope you’ll find them as enjoyable to watch as they were for me.
