Today we’re talking about the San Biagio brewery, in Nocera Umbra. The first phrase you find on their website is: “The first Italian craft beer inspired by monastic tradition.”
I couldn’t help but sit down with Giovanni Rodolfi, an experienced master brewer, and start bombarding him with questions — true beginner‑style.
The water of Nocera Umbra and the monastic tradition: that’s how the idea of making beer was born.
A craft beer, unfiltered, unpasteurized, refermented in the bottle. Different recipes inspired by medicinal herbs. Beers for meditation, or beers for pairing…
And at that point, the inevitable provocation arises: when I sit down at the table, for my amatriciana, should I order wine or beer? Giovanni doesn’t flinch — and offers me his solution.
