Identità Milano returns: Pizza takes center stage in the Sorì spaces

Franco Pepe, Ciro Salvo, Antonio Cavoto, Giovanni Senese, Tonino Cogliano, Antonio Visentin, and Giammarco Ambrifi: a team of outstanding talents showcasing the use of premium dairy products in pizza toppings.

An unmissable event for enthusiasts, foodies, and industry professionals, Identità Milano is a true cultural platform dedicated to the world of food and wine, offering a 360-degree experience that spans from fine dining to hospitality. Taking place from Saturday, February 22 to Monday, February 24, the Allianz MiCo in Milan will transform into a spectacular celebration of flavors, where each participant will bring their unique language and expertise, united by the common thread of craftsmanship that has always defined Italian excellence.

A Special Spotlight on Sorì . On this extraordinary stage, Sorì, a leader in the production of premium dairy products, will take center stage. This Campania-based company, which has achieved international recognition in over 60 countries, will reaffirm the strong bond between its artisanal cheeses and the world of gourmet pizza at Identità Milano. Thanks to a collaboration with an exceptional team of master pizzaiolos, Sorì will host engaging showcases in its dedicated space (Pavilion 1, Stand D8).

A Star-Studded Program at Identità Milano 2025. The Identità Milano 2025 program promises an intense and exciting lineup, with Sorì bringing together friends and collaborators—more than just clients—who will showcase their expertise and surprise attendees with their creations.

The event kicks off on Saturday, February 22, at 12:00 PM with Franco Pepe from Pepe in Grani, a true master of flavors and a recent guest at King Charles III’s royal table. He will present some of his signature dishes, enhanced by Sorì’s premium dairy products. At 3:00 PM, the stage will welcome Antonio Cavoto, a young pizzaiolo from San Marco dei Cavoti, who has brought the warmth of Southern Italy to Amsterdam with his pizzeria Mangia Pizza.

On Sunday, February 23, at 12:00 PM, Giovanni Senese will take over, exploring the fusion of Campanian authenticity with Ligurian influences. Later, at 3:00 PM, Tonino Cogliano from Imperfetto Pizzeria in Pateaux, Île-de-France, will show how gastronomic excellence transcends national borders, bringing together Italy and France under the banner of great taste.

A Monday That Feels Nothing Like a Monday. Monday, February 24, at 12:00 PM, Ciro Salvo from 50 Kalò—a long-time supporter of Sorì—will take the stage. Known for his incredible talent, which has captivated palates worldwide, he will once again showcase his expertise in creating top-quality pizzas. The event will close at 3:00 PM with Antonio Visentin and Giammarco Ambrifi from Pizzeria della Passeggiata, who will demonstrate how they balance family traditions with modern and innovative pizza toppings.

Showcasing Sorì’s Dairy Excellence. The live cooking sessions led by these renowned pizzaiolos will highlight Sorì’s finest dairy products, demonstrating how top-quality ingredients elevate pizza to an art form. These demonstrations will also serve as an opportunity to educate audiences on the importance of DOP certification, which guarantees authenticity and consumer protection.

Particularly featured will be:

  • Buffalo Burrata, made with 100% DOP-certified milk,
  • Buffalo Stracciatella, and
  • Buffalo Ricotta Campana DOP,

all of which showcase the incredible versatility of premium Italian dairy craftsmanship.
